Celebration Lamb recipe from the Range Cooker Specialist
- 1 onion, finely chopped
- 25g. (1oz.) butter
- 200g. (7ozs.) "ready to eat" apricots, chopped
- 50g. (2ozs.) breadcrumbs
- 2 tablespoons parsley, chopped
- 50g. (2ozs.) raisins
- Seasoning
- 1 egg, beaten
- 1 boned shoulder of lamb
Method
Fry the onion in the butter until golden brown and mix with the apricots, breadcrumbs, parsley, raisins and seasoning.
Bind together with the beaten egg.
Place the stuffing into the cavity in the lamb and sew up. You may freeze the lamb at this stage if preferred. Place in a polythene bag, seal and label. Thaw overnight before roasting.
Weigh the stuffed shoulder and roast, uncovered, for 25 minutes per 450g. (1lb.) and 25 minutes extra or until tender.
